Breakfast is one of my favorite meals. I don’t always have the time to have a super fancy breakfast, but when I do I enjoy it.
I think one of the best things about breakfast is that it has so many options that are called “breakfast foods” but are really like desserts.
I mean think about it. Cinnamon rolls? Sugary delicious-ness. French toast – add some cinnamon and sugar like I do and whalah! Sugary sweet. And then you get to add syrup. More sugar! Even toast with jelly is sweet and tasty. And what about banana bread or muffins? Those are breakfast foods right? And cereal? My fave is cinnamon toast crunch. Talk about sugar! With or without milk I can’t resist it!
That’s why I think breakfast rocks. It can be lots of fun to have breakfast for dinner too. It’s dinner and dessert all in one!
Unfortunately I can’t eat like that all the time. Which is the leading reason I don’t have crazy breakfasts regularly.
But for a treat (or any other reason, really) these pancakes are perfect! Cake in pancake form.
I was shocked at my husband’s reaction to them too. Actually all of funfetti week was a surprise in terms of his reaction. He claims to not love sweets too much, but he got quite excited about funfetti stuff. When I finished taking pictures and told him we were ready to eat, I thought for sure he’d want his pancakes with regular syrup so that they weren’t too sweet. Instead he stole my plate. I was shocked, but happy. I love when he can share in my love of sweets. 🙂
So here’s some sweet pancakes for you. Enjoy!
Funfetti Cake Batter Pancakes with Rainbow Chip Icing
makes about 12 pancakes
1 1/2 cups all purpose flour
2/3 cup funfetti cake mix
1 tablespoon sugar
3/4 teaspoon baking powder
2 eggs
1 teaspoon vanilla extract
1-2 cups milk
sprinkles
1 cup rainbow chip icing
4 tbsp milk
1. Combine flour, cake mix, baking powder, sugar and mix.
2. Add 1 cup of milk, egg and vanilla extract and mix until smooth. If too thick, add more milk as needed. You don’t want the mix to be too thick or too thin.
3. Put desired amount of sprinkles into batter.
4. Preheat your pan and add some butter. Allow the butter to melt.
5. Add batter in about 1/4 cup measurements to the pan. Cook until bubbles have formed on top, then flip. Continue cooking for about another minute.
6. Combine icing and milk. You can add more or less milk depending on how thick you want it.
7. Pour icing mix over pancakes. Enjoy!

What is the rainbow chip icing? Thanks so much I really want to make these!
Hi Kelly! Here is a link to the icing. It’s Betty Crocker. It’s mainly a vanilla icing with little soft colorful candies. There’s just something about it I love, but you could use a vanilla icing too. It can be hard to find, but usually Wal-Mart carries it.
